
This Thai chicken recipe is a wonderful pasta meal with protein and a mix of vegetables. If you prefer, you can substitute other vegetables. If you’re looking for comfort food, this meal is perfect. After a gorgeous day hiking to Laughing Falls, there is nothing better than a quick and easy meal to cook while camping. As a bonus, it’s healthy too! It doesn’t take long to prep and cook the meal, about one hour in total. It’s a super easy clean-up with only a few items to wash. You can make additional food to share if enjoying the outdoors with another couple. The leftover food will be good to eat later if you want to reheat it the following day and save yourself from having to cook another meal. You can debone a whole cooked chicken at the campsite or do it at home and bring the chopped pieces in a cooler. You can also buy a pre-packaged cooked chicken (the work is already done for you) and chop it into pieces while staying at unique camping places in Alberta. Julienne the carrots or slice them, depending on your preference. If you’re looking for another recipe with carrots, I highly recommend making a carrot-apple loaf. The carrot and apple make the loaf moist, and it’s a wonderful snack to have on hand. If you’re like Kris and don’t like the taste of peanut butter, don’t worry—it doesn’t have a strong taste. He doesn’t mind the meal when everything is mixed. Stay away from this recipe if you have an allergy! The honey and soya sauce helps create a fantastic-tasting sauce. Tip: Make sure you put enough honey and soya sauce to counterbalance the peanut butter. You’ll be more successful in hiding the strong peanut butter taste that way. Enjoy your Thai chicken pasta! |

Thai Chicken Pasta
Enjoy a tasty Thai chicken pasta recipe that's quick, easy, and perfect for camping. Comfort food at its best!
Equipment
- 1 Pot
- 1 Colander
- 1 Cutting board
- 1 Peeler
- 1 1/4 cup
- 1 cup
- 1 Tbsp
- 1 Knife
- 1 Garlic mincer
- 1 Frying Pan
Ingredients
Main Dish
- 1 lbs thin spaghetti
- 4 tbsp sesame oil
- 4 chopped green onions
- 1 cup julienne or sliced carrots
- 2 cups sliced napa cabbage
- 2 cups chopped cooked chicken
- 5 minced garlic cloves
- 1 tbsp peeled minced ginger
Sauce
- 1/4 cup honey
- 1/4 cup peanut butter
- 1/4 cup soya sauce
- 3 tbsp rice vinegar
Instructions
Pasta
- Boil a pot of water.
- Cook the pasta.
Frying pan
- Drain the pasta.
- Add the sesame oil to the frying pan.
- Keep a few green onions to garnish once the meal is cooked.
- Add the green onions, carrots, napa cabbage, chicken, garlic and ginger to the fying pan.
- Saute the items until they start to get a bit soft.
Sauce
- Add the sauce (honey, peanut butter, soya sauce and rice vinegar).
- Stir all the ingredients together in the fying pan with the pasta and let it absorb all the flavours for five minutes.
Finishing touches
- Sprinkle the dish with green onions.
