This Mini Angel Food Cakes recipe is one of my absolute favourite desserts! It’s super simple to make and offers a nice treat after a long day of hiking Athabasca Glacier or kayaking Lake Isle.
If you are two people, you can purchase one package of mini angel food cakes, generally found at Safeway or Save on Foods. You’ll have extra ones to eat on additional nights or if you go with another couple, you’ll be able to eat most of them by the end of the first night. You can split up the last two for a snack later.
I like to pick fresh berries to add to my dessert while camping in British Columbia. If you’re picking fruit, you might need to hike near your campsite to find them but the delicious fresh taste of the berries or fruit will be worth it!
Stopping at a U-pick place is also a consideration. Then the company can direct you to find fruit right away instead of going on an adventure exploring. There are many awesome places to stop in British Columbia with cherries, peaches, and apples. Your dessert bowl can be filled with a variety of colours and tastes.
After adding the fruit, treat yourself by pouring cream on the dessert. A small 473 mL container will spread nicely between six bowls. Adjust according to the number of people you have.
If you’re looking for other treats while in BC, DeMille’s Farm Market in Salmon Arm has delicious ice cream with many varieties. They have a variety of fruits, vegetables and meats you can pick up as well.
Depending on which campsite you’re at, Gorgeous Hiking to Laughing Falls in Yoho Nationa Park is a great area to explore if you’re camped at Kicking Horse Campground.
